Basic make-ahead holiday desserts that freeze well
Cakes
Cakes are always freezable as long as they aren’t decorated. Wrap each cake layer or cupcake in plastic wrap then foil to protect them from freezer burn. Make sure they are completely cooled before wrapping. You can decorated or fill as desired after thawing.
Pies
Fruit pies are easily frozen after being baked and completely cooled. Like the cakes, wrap with plastic then with foil. Let your pie thaw before warming in the oven.
If you wish to freeze an unbaked pie you may want to think about treating your lighter colored fruit filling with ascorbic acid (like Fruit Fresh) to keep the fruit from browning before baking. This added step may be worth it for those looking for a flakier crust for their baked pie.
Some other pies that freeze well include pumpkin, pecan, key lime, and chocolate.
Cheesecake
Cheesecakes are one of the best make-ahead and freeze desserts. After cooling and wrapping your cheesecake it can be stored in the freezer for up to four months. Just thaw and top as desired for an instant dessert.
Cookies
Most cookies freeze well. You can freeze cookie dough in a roll to easily cut oven ready discs for baking or roll dough for drop cookies into balls for freezing. Freeze the dough balls in a single layer then transfer to an airtight container or zip-top bag. Dough for cut-out cookies can be wrapped well and frozen in a disc so it can be easily thawed and rolled out. Frozen dough will keep for about 3 months.
Cookies can also be frozen after baking. Freeze them in a single layer then wrap and place in an airtight container or zip-top bag. Baked cookies will only keep in the freezer 3-4 weeks.
